Local author Richard Munson joins us to discuss his new book "Tech to Table: 25 Innovators Reimagining Food." The book profiles twenty-five entrepreneurs redefining what it means to farm, and even the nature of food. These innovators make protein-rich meats from plants and stem cells, without slaughtering animals. They grow crops year-round within large urban warehouses, reducing food waste. They send autonomous robots to pick fruit and pluck weeds, reducing drudgery and curtailing the need for poisonous herbicides. They use 3-D printers to make customized and nutritious meals. Confronting and tackling climate change, they edit genes so plants withstand droughts or sequester carbon. While they come from diverse backgrounds, these innovators share an outsider’s perspective, an ambition to disrupt our un-digitalized food system, and a commitment to feeding a growing population nutritiously and sustainably.
